SweatTheStyle_BeefandBroccoli Ingredients:
6oz Thinly Sliced Tri-Tip about 2in strips
½ C Cooked Beech Mushrooms
2 C Blanched Baby Broccoli
¼ Onion, Thinly Sliced
4 Cloves Garlic, Thinly Sliced
2T Bragg Soy Sauce
2T Extra Virgin Olive Oil or Grape Seed Oil
1t Chili Flakes
Salt

To cook the mushrooms:
Heat a sauté pan over medium-high heat, add 1T Oil and add the mushrooms. Sear until golden brown and season with a pinch of salt and pepper. Turn off the heat and set aside.

To blanch the broccoli:
In a large pot, fill with 8C of water and bring to a boil. Add enough salt for the water to taste like the sea. Drop the broccoli into the water until the broccoli is almost tender, about 30 seconds. Pull the broccoli out with a kitchen spider onto a plate or sheet pan and set aside to cool.

To make the beef and broccoli:
Heat a large sauté pan over medium-high heat, add 1T Oil. Sear the sliced Tri-Tip onto the pan until just almost cooked through, about 2 minutes and remove from the pan. Turn down the heat to medium-low, add the onions, garlic and stir until translucent. Then add the broccoli, mushrooms, chili flakes and soy sauce and stir together. Put back the beef into the pan and stir again.
Serve over brown rice or eat as is.

Heirloom Tomato and Stone Fruit Salad

SweatTheStyle_Catty_StoneFruitSaladIngredientsWalking through the Hollywood Farmers Market we noticed that the heirloom tomatoes and stone fruit are perfectly ripe and in season. Chef Catty Boom Batty collaborated with us to make a beautiful fresh and light salad inspired by the season. Since stone fruit reached their peak in taste and juiciness she keeps the salad simple and let the ingredients speak for themselves. For creamy texture along with protein and calcium, she added Organic Greek Yogurt mixed with honey sprinkling roughly chopped Marcona Almonds. For flavor and color she introduced Opal basil and picked flowers off broccoli to add to the mix. You can make a version of this salad easily by going to the farmers market and seeing what’s perfectly fresh and in season wherever you live. When you have the best possible ingredients you don’t have to do much to create something easy, beautiful, and delicious to eat!
Serves 4
Ingredients
2ea Heirloom Tomato, ripe cut into wedges
2ea Ripe Nectarines, cut into 1” wedges
2ea Ripe Peaches, cut into 1” wedges
2ea Ripe Plums, thinly sliced
¼ c Opal Basil, chiffonade or using the buds and smaller leaves
¼ c Marcona Almonds, rough chopped
2 T Honey
1 c Greek yogurt, seasoned with salt and pepper
Fleur de Sal, to taste
Freshly ground pepper

With a tablespoon, smear 1/4c of yogurt on the rim of each plate. Gently place ½ of ea tomato and fruit onto the plate sporadically. Garnish each plate with a pinch of marcona almonds and basil. Drizzle ½ T of honey onto the ingredients and season with a pinch of fleur de sal and pepper. (Pictured plated two different styles.)

Brussels Sprout and Maple Glazed Tofu Bites

SweatTheStyle_BrusselsSproutTofuBitesThese Brussels Sprout and Maple Glazed Tofu Bites are a no-fuss finger food that are easy to pick up and chow down. Perfect for holiday socializing and catching up. There is no better time to enjoy Brussels sprouts than right now as they’re in season and rich in rejuvenating, healing nutrients. Brussels sprouts are a part of the cruciferous vegetable family (which include broccoli, cauliflower, cabbage, kale) and contain vital cancer-fighting components that offer powerful protection against carcinogens. The compounds found in these vegetables support the body’s natural detoxification process, helping to rid it of cancer-causing agents in our food, water, and environment. Organic tofu adds a protein punch to this snack and will help stave off cravings and keep you feeling energized and satisfied. Enjoy these bites dipped in plain organic full-fat Greek yogurt or nosh on them plain as they pack a festively flavorful punch.

Ingredients:
Brussels Sprouts: 1 lb, rinsed
Extra-Virgin Olive Oil: 2 tbsp
Himalayan Pink Salt & Black Pepper: 1 tsp
Organic Tofu (preferably sprouted): 1 Block
Raw Maple Syrup: 2 tbsp
Low-sodium tamari sauce: 1 tbsp
Coconut oil: 1 tbsp
Garlic Powder: 1 pinch
Himalayan pink salt and black pepper: 1 pinch

Instructions:
Preheat oven to 400.
Slice the Brussels sprouts in half, lengthwise. Don’t trim the ends, as they’ll hold together better with them.
Toss the sprouts on a rimmed baking baking sheet with the oil and a good sprinkle of salt and pepper.
Bake for 40 minutes total but be sure to check them half way through. Toss them around too for even baking.
In the meantime, cut tofu into thick, small strips, place them in a bowl and toss them in maple syrup, garlic powder, salt and pepper. Heat a medium skillet over medium-high and top with coconut oil. Add the tofu and sauté for about 5 minutes, until nicely golden and crispy. Set aside.
Remove the sprouts from the oven and let them cool about 5 minutes, or until you can handle them.
Using toothpicks, slide on a sprout half, followed by a tofu piece, then bookend it with another sprout half.
Arrange on a platter and serve.

Fine Chinese Fried Quinoa

SweatTheStyle_ChineseQuinoaRecipeThe super food version of a fine Chinese classic.
Ingredients:
Broccoli: 1 Head, steamed
Carrots:  1/4 Cup, steamed and chopped
Coconut Oil: 2 Tbsp
Egg: 2 whole
Green Onion: 1 Stock, chopped
Garlic: 1 Clove, finely minced
Ginger: 1 Tsp, freshly grated
Quinoa: 2 cups, day old made or left over
Bragg’s Liquid Aminos: 2 Tbsp

Instructions:
Heat a wok or large pan over high heat and add coconut oil. Once oil is hot, add eggs and scramble for 15 seconds. Once the eggs are cooked remove and set aside.
Add a bit of coconut oil to pan and set heat to medium high. Add green onion, ginger, and garlic. Stir fry for 30 seconds until fragrant. Add cooked eggs, steamed vegetables, and quinoa. Toss and stir fry for 2 minutes. Spread everything out over the surface of the wok and pour in Bragg’s Liquid Aminos. Toss again and stir fry for an additional minute. Taste and add additional Aminos if needed.
As an option for more greens, add frozen peas at the same time as the steamed vegetables when cooking.
